Winemaking Process: Grapes are dried for two months before pressing. The must is fermented and aged for at least 3 years in typical wood barrels called "caratelli". Fermentation is extremely long and slow and allow the wine to get its characteristic notes.

Tasting Notes: Long-lived wine, with potential to age over the next century. This wine is deep amber in colour, with flavours of honey dried fruit, figs with a spicy finish. On the palate it is creamy, rich, sweet and fresh, with citrus and fried fruit notes. It is full-bodied with a beautiful balance of sweetness and acidity.

Food Pairing: Perfect by itself or great with typical Tuscan biscuit called "cantucci", extremely good with mature cheese, ice cream and fruit based desserts.
