Grape Variety: White Malvasia, Chardonnay & White Bombino
Background: The vineyards are located in Salento peninsula with perfect sun exposure and with the soil composition. These aspects are the perfect ingredients to create a wonderful combination of freshness, flavours and minerality.
Tasting Notes: Straw yellow with gold reflections, intense and persistent bouquet, fruity with hints of ripe yellow fruits. Fresh, ready to drink, pleasant, harmonic and persistent.
Food Pairing: The richnes and aromatic fragrance of this Bianco Puglia makes it the ideal wine to pair with seafood, first course pasta dishes with vegetables, white meats and baked fish.
Background: The vineyards are mostly situated in the communes of Manduria and Sava and are owned by growers with whom Filippo has been working for many years. Production is lower than its potential, which ensures the best quality grapes are selected. The red soils are calcerous clay and rich in iron, minerals and nutrients. 80% of the grapes come from old bush vines and the rest from trained vines that are at least 20 years old.
Winemaking Process: The grapes were gently pressed and cooled to 10ºC for a maceration period of 10-12 days with regular pumping over. Yeasts were added to start fermentation, which took place under temperature controlled conditions of up to 20 ºC. The wine was then transferred to oak barriques for a short time for fining, before bottling.
Tasting Notes: Intense ruby red colour with violet reflections. Intense with red fruits. A full bodied wine, soft, quite tannic, harmonious. Ready to drink.
Food Pairing: It goes well with savoury cold cuts, red meats cooked in irons, game, smoked cheeses and herbed cheese. It is also well paired with seafood dishes that are particularly savoury such as dwordfish with rosemary.
